Banana loaf?

Hi there, Well I'm quite new to the South African section so I hope you don't mind me asking this question. Anyway I'm wondering; do you South African wives or even husbands (South Africans/ Afrikaners are the best at cooking!) know of a good recipe for Banana loaf? My ouma used to make it for me when I was a little girl and I loved it. I have tried to get through to my mother who's in the UK but had no such luck. My in-laws are coming up for the long weekend and with it being Mothers Day on Sunday; I'd love to show-off with Banana loaf as my hubby loves it and so does his family! Hope you don't mind a Canadian answering. 1/4 c. margarine 1/2 c. sugar 1 egg 1/8 c. walnuts (chopped) 1/2 tsp. salt 1c. flour 1/2 tsp. baking soda 1 large over ripe banana Preheat oven to 350 Grease loaf pan Cream butter adding sugar gradually Add egg, beat until light and fluffy Mix dried ingredients together and then add to creamed mixture. Mash banana and walnuts and add. Pour into loaf pan and bake for 45 min. You may want to double the recipe as it only makes 1 small loaf. I also sometime use 2 banana's instead of just 1, it just makes it more bananaie. Hope I helped.
Here is the South African recipe . I simply love it ! Try to use bananas that are a little over-ripe . It works better . Ingredients: 125g butter or marg 1 cup castor sugar ( white or brown sugar ok) 2 eggs 2 - 3 large bananas mashed 1 tsp vanilla essence 2 cups flour 1 tsp bicarb 1 tsp baking powder Method: Cream butter and sugar. Add eggs one at a time and beat well. Add bananas and vanilla and fold in dry ingredients. Baking Time: bake in a loaf tin at 180 c for 45 mins.
And here is my heart friendly version using vegetable oil: 180g Sugar (Roughly one cup) 2 Eggs 250g Flour (roughly 2 cups) Plain cake flour 1 and a half teaspoons Baking Powder 1 teaspoon Bicarbonate of Soda 1 teaspoon Salt Half a teaspoon Cinnamon Pinch Nutmeg 125 ml Oil 150 ml Milk (makes a total of 275 ml liquid Oil & Milk) 1 teaspoon lemon juice 1 teaspoon Vanilla Essence 2 Ripe Bananas Puree Bananas and Oil, Milk, Essence and Lemon Juice. Sieve Flour, Baking Powder, Bicarb, Salt and Spices Beat Eggs until really fluffy, about 3 to 4 minutes. Add Sugar and continue beating till creamy white and fairly stiff. 3 - 5 minutes Alternately add dry ingredients and liquid, gently mixing after each addition. Pour into a loaf tin Bake at 180°C for 45 - 50 minutes. *Edit* All the reicpes here are with plain cake flour. If it was self-raising then there would be less or no baking powder or soda.
