African Cooking Recipes Question And Answer
I need a nigerian african recipe for something I once had...?
while I was in university. I had a nigerian roommate and she made this wonderful beef stew with loads of tomato sauce and chili peppers.. but what she served it over is what im hunting for.. She used some sort of starchy powder like flour or potato buds or something.. and she mixed in water and a little oil and cooked this over the stove in a pot, with a huge thick wooden spoon, it looked something like raw bread dough.. But she did cook it.. the way it was served was in a plate, you'd scoop up balls of it, roll it around in your fingers, and make an inditation with your thumb in the center and dip it into the beef stew and eat it.. It was wonderful and I have no idea what it is or called.. thanks...

AMALA
Makes enough for 2-3 people.
About 6 cups of elubo (amala flour)
Water (about 4 cups) Bring the water to a boil.
Add the elubo slowly, stirring as you add it.
Keep adding it until it is thick (you may not need all of the elubo depending on how thick you want it).
Once it is all added, continue to mix until it is smooth and consistent in texture.
Serve with some sort of stew.
Or
EBA
Serves about 2 people.
About 2-3 cups of gari.
About 4-6 cups of water Bring the water to a boil.
Lower the heat.
Add the gari to the boiling water.
Stir the mixture until it is consistent. Add more gari or more water to obtain the thickness you would like. Because gari is a little coarse, the resulting eba will be a little course, but if done properly, should not be lumpy.
Serve with some sort of stew
