Make it the Australian way
add finely chopped onions and celery to the mince meat, sprinkle with garlic and chilli, add some worstershire sauce and an egg, mix thoroughly, using your hands if necessary
shape into patty and coat with flour shaken with salt and pepper, then spray the pan and dry fry, this is where the quality of your mince will show, should be very little fat in the pan.
When they are cooked, prepare a toasted bread bun with butter, lettuce leaf, slice of tomato and a slice of beetroot, place the cooked patty on top of this and add your favourite sause, i.e. chilli, tomato or BBQ and enjoy if you wish you could add a cooked fried egg and some bacon and a slice of fried pineapple, this is called "the works" in Australia

I've never tried coating it with flour. But I will.
In our hamburgers we put mashed up bread or bread crumbs, and an egg.
Sounds delicious - although fattening - but what is the fat content of the meat you are using? 10%? 20%? Is the fat absorbed by the flour?
mine are very similar but i like to add chunky bits of semi sundried tomatoes to the mince. And sometimes capers
The Indian version:
2 lbs. ground chicken (feel free to use ground turkey or lamb)
2 large garlic cloves, finely minced
½ inch piece of fresh ginger, peeled and finely minced
1 medium onion, finely diced
2 tsp. ground cumin
1 tsp. ground coriander
2 tsp. garam masala
1 tsp. red chili powder
1 tsp crushed red chili flakes
juice of ½ lime
salt & pepper to taste
1 large egg, beaten
2 tbsp oil (canola or vegetable)
freshly chopped cilantro leaves
Method:
In a large mixing bowl, thoroughly combine all the ingredients and refrigerate for at least 1 hour (longer is better). Then form 20 uniformly shaped balls, which are then slightly flattened into a medium size patty. Set aside until needed.
In a large frying pan on high heat, add 1-2 tbsp. of oil. When the oil is hot, carefully add the patties, making sure not to overcrowd the pan (this may be done in batches). After 2-3 minutes, flip them and reduce the heat to medium. They should have a lovely golden brown color. After an additional 2 minutes cover the pan for 2-3 minutes so they will cook all the way through.
Serve with toasted buns, lettuce, tomatoes, red onions....your favorite toppings and sauces...
