Does anyone know how to make coconut fudge? I am from the caribbean so i am interested in any receipes.?

I would like to know how to make the soft fudge. i can only make the hard fudge so i figure that i am doing something wrong. can some 1 provided me with a recipe with measurements and the time to keep the fudge on the stove. i dont know if i cook it for too long thats y it gets hard. thanks

Me mummy say you letting it cook a little to long.For coconut fudge mummy adds: 1cup of coconut cream or 11/2 cup cocnut milk 1lb sugar spice ginger[you cant have a great tasting fudge without ginger in it trust me :), vanilla essence[few dash of it] 1 tbsp butter 1 tin of condensed milk Angostura bitters[few dash to taste.mmmmmm]. *Mix all ingredients in a pot before placing it on the stove. *When the sugar seems to have melted into the other ingredients then place it on the stove and cook on medium low heat for about half and hour stirring constantly. To know if the fudge good you can do a cold water test.Drop a bit of fudge into a glass of cold water and see if it forms a ball.The ball should be a bit firm but not to hard.Once the ball forms your mixture is good. Place in a greased tray and let cool at room tempreture.The fudge should set before it is completely cool. Have fun. Send me a few blocks when you are done :)
now i cant tell if chara's recipe for the fudge good or not, but i am volunteering to be the taste tester. just to make sure that when you are thru nobody has any complaints. Call me when you finish
