I have a caribbean background and I love caribbean food! I am learning how to cook it on my own...Can anyone give me a a good caribbean recipe, for chicken...I am making some red beans and rice tonight...I need a good caribbean recipe for chicken...can anyone help? Thanks...

The first thing that comes to mind is Jerk Chicken. Pretty easy and delish. Here's a recipe for ya': 2 teaspoons ground allspice 1/2 teaspoon ground nutmeg 1 teaspoon salt 2 teaspoons dried thyme 1 teaspoon ground ginger 1 tablespoon brown sugar 1 1/2 teaspoons ground black pepper 2 tablespoons vegetable oil 2 cups chopped onions 5 cloves garlic 2 habanero peppers 1 (5-pound) chicken, skin on, cut into 10 pieces 1 cup lime juice Combine all ingredients except the chicken and lime juice in a food processor and puree until pretty smooth. Place the chicken and lime juice in a mixing bowl and pour about half of the jerk sauce over it, tossing the chicken around to coat it well. Place in a container and pour the remaining sauce on top of chicken. Cover and refrigerate for at least 4 hours or overnight (if possible). Preheat oven to 350 degrees F. Remove the chicken pieces from the jerk marinade and place them, skin side up, on a rimmed baking sheet or dish. Bake in the oven for 45 to 55 minutes until cooked through and the juices run clear when pierced with a fork.
why don't you get some Jerk seasoning?
Jerk it. Get a small jar of whole allspice berries, toast 'em and then grind 'em fine. Put the powder in a food processor and add 2 bunches of green onions, 5 - 6 cloves garlic, 2 habeneros, 1/2C brown sugar, 1T thyme, 1t cinammon, 1/2 t nutmeg and a pinch of salt and a good grind of pepper. Start grinding it all up and drizzle in enough soy sauce to loosen it up. This stuff is a great marinade for chicken, pork or my personal favourite, New York strip steaks--the big thick ones--and it keeps in the refrigerator for weeks. Marinate the chicken pieces for at least 4 hours in enough of the above mixture to coat them. Then grill away.
