Caribbean Cooking Recipes Question And Answer
Is there a good substitute for oxtails....?
If not, where in the world can I find oxtails. I would really like to cook an Emeril Live recipe and it actually calls for oxtails. Well, considering the recipe is for Caribbean Oxtails.

Go to a local butcher and special order them, or check out Mexican grocery stores in your area. Some are frozen at the grocery store as well. Ethnic grocers may carry them too, like Asian grocers.
They are actually cow tails.
The Butcher sell ox tails
Either go to a butcher or go to a Caribbean grocery store.
These are really butchered cow's tails. Many supermarkets have them or can get them on request. They are delicious in a stew or roasted...very fatty however.
Any soup bone should be fine.
There s NO substitution for oxtails, believe me! You can come near (not close) with beef, but it's missing the richness that oxtails offer.
Go to an African or Mexican market to find them. If you don't have any, then go to an African or Mexican community and see if the local chain market has them.
I know this sounds like a joke but squirrell has about the same taste and greasiness of oxtails.
If you cant find oxtail, substitute bone in beef short rib. There isnt as much collagen in the rib so the broth wont be quite as rich/viscous as with oxtail. They both require a long cooking time because they are very tough, working muscles.
