Chinese Cooking Recipes Question And Answer
Cooking chinese soup?
What can I cook with salt,seasoning.onion x1,hot chilli powder and fine herbs.I can't use things such as,chicken stork, corn, or whatever I can just only cook with those six OK!!!
SO PLEASE GIVE ME A SIMPLE AND QUICK RECIPE I DON'T WANT ANY FANCY STUFF!!!.

CHINESE CHICKEN STOCK SOUP
INGREDIENTS:
3 pounds chicken pieces (backs, necks, or wings)
10 cups cold water
3 slices fresh ginger
2 green onions (spring onions, scallions), cut into 1-inch pieces
1 tablespoon Chinese rice wine or dry sherry
Salt, to taste
Black pepper, to taste, optional
PREPARATION:
Rinse the chicken pieces under running water. Place in a large pot with 10 cups water (or enough to cover).
Add the ginger, green onion, rice wine or sherry. Bring to a boil over medium heat, occasionally skimming off the foam that rises to the top.
Add salt to taste and black pepper if desired.
Cover, reduce the heat and simmer for 2 hours.
Strain the broth and use as called for in recipes. Yields about 8 cups.
Can you use maybe WATER?
You could make a simple broth using the fine herbs, whatever they may be, by bringing the water to a boil. Add in the herbs and the onion (diced or in rings), then let that simmer for 5 minutes. Then add the hot chili powder and seasonsings, for some kick and season with salt to taste. You don't want to make it too salty otherwise you'll take away from the natural taste of the herbs.

I would suggest adding some diced Tofu to the broth since they will soak up the flavor of the chilis and herbs...but since you can't use Tofu....then I guess you will have to live without it.

Saute your onion in oil or butter, add your seasoning, herbs, salt and hot chili powder to taste. Add Just enough water to cover ingredients. Cover and boil a few minutes. There you go, what else can yo do?
