Stir fry!!
What's cool about this is you can pretty much use whatever you want. Here's what you need...
-Chopped veggies- anything you like. If you want it quick and easy, get a bag of frozen mixed, or you can do it all yourself. Personally, I like bean sprouts, zucchini, bell peppers, onions, carrots, peanuts and garlic.
-Chicken- use the whole strips, or cut into bite-size pieces. Season with salt and pepper.
-Oil or butter.
-Soy sauce or Terayiki (sp?) sauce
-1/2 cup water with 1 tbsp cornstarch
In a large frying pan or wok, cook your chicken with 2 tbsp oil or butter. When the chicken is almost done, add about 2 oz soy sauce and your veggies. Toss this around until chicken is completely cooked (you should be able to cut it with your spatula) and veggies are heated through but still crispy. Add another ounce of soy sauce and then slowly drizzle the cornstarch/water mixture to thicken the sauce. Add the cornstarch about 1/2 oz at a time only until the sauce is to your desired thickness.
Serve with rice or noodles.
If you want to zest it up a bit, add red pepper flakes and ground ginger.

CHICKEN CARROT FRIED RICE
3/4 lb boneless skinless chicken
4 tb. soy sauce divided
2 garlic cloves
1 1/2 c broccoli
3 green onions
2 tb veg. oil
2 large carrots, shredded
4 c cold cooked rice
1/4 ts pepper
combine garlic, chicken, and 1 tb soy sauce and set aside
In a large skillet stir fry broccoli and green onion in 1 tb oil for 5 minutes. Add carrots and stir fry 4 minutes longer
Remove and set aside
Same skillet fry chicken in remaining oil until done then add rice, pepper,veggies, and remaining soy sauce and heat through.
Try broccoli,carrots,snap peas,water chestnuts,bamboo shoots,mushrooms,green onions and fry together with the chicken.
all in one chinese fried rice.
This will depend on the amount of rice and chicken you have left.
chicken recipe:
marinate chicken into
lime soda (7-up or Sprite)
salt (to taste)
chopped chili
fry chicken after marinating it for 15 to 30 minutes (the longer the better really)
rice recipe:
garlic (minced)
onions (minced)
corn, carrot and green pea mix
scrambled egg (sliced into thin strips)
left-over rice
fry rice into the same pan where you fry the chicken... should add flavor to the rice.
My favorite... semi homemade chinese is cooking the chicken with a stir fry veggie mix, I use Kinkoman stir fry powder and then i cook up top ramen noodles. I mix it all together with the chicken.. and very yummy
