Carnitas??? Please help!?
I have been looking for a good carnitas recipe and cannot find one. Local restaraunt here cooks the best I have ever had and I am not sure what type of pork cut and how long to cook and with what. I have tried to make it but it tastes nothing like what I had locally. I believe it is more of the cuban version that is crispy on the outside and just falls apart on the inside... just great stuff. Any help is greatly appreciated!

Carnitas make a great filling for your tacos, tortas and burritos. They are chewy with crispy pieces on the outside. Carnitas are also tasty alone or with a little crema and salsa.
INGREDIENTS:
3 lbs pork (shoulder or butt)
5 cloves of garlic, peeled
1 bay leaf (laurel)
1 onion, peeled and quartered
Broth or water to cover meat
Lard or oil for frying
salt to taste
PREPARATION:
In a large saucepan, brown the pork on both sides. Carefully add in broth or water to cover meat. Add in garlic, bay leaf and the onion. Bring the water to a boil then turn it down to a simmer for 21/2 hours.
Remove pork from liquid and pull apart into chunks, discard any excess fat or bones.
