chimichura sauce--- its a blend of oil- either vegatable oil or extra virgin olive oil -- garlic--- parsley and cilantro you can buy it premade at the grocery store on the international isle or etchnic isle or make it yourself ---- if you make it yourself taste it, your tounge will tell you if you need more or less of the ingredents --- the oil is there to keep the flavors together -- it should be thick and not runny ----lots of flavor but no heat ---
