Cuban Cooking Recipes Question And Answer
Need quick and EASY, but delicious recipe for dinner tonight?
Help, I do NOT know how to cook... I mean I try!! I cook for my boyfrined and he hates it. (I don't like my own cooking either). I make chicken, rice, salad, steak... i really don't like my chicken though. I just want a good recipe for tonight that is DELICIOUS, has flavor in it, something different, that will make him happy. What should I cook? And I'm not a chef, so can you please tell me what temp to cook and for how long please, and also what to cook it in.
I don't want chicken tonight, I already had some for last night.
I would like to try a steak, or Pasta sounds good, or maybe fish, or shrimp. It can be anything jsut as long as its EASY to prepare and cook, and comes out good. My boyfriend is Cuban, if that helps any. I am not experienced at cooking dont expect me to go out and buy wine to pour in my recipe please thanks.

SOUTHWESTERN NACHO CHEESE CHICKEN
4-5 chicken breast halves
1 can Campbell's Nacho Cheese Soup
1/4 stick Velveeta pepper jack cheese (optional for a little spicier taste)
This recipe is so easy and gives a new Southwestern "kick" to baked chicken that you and your family will love.
Roast 4-5 chicken breast halves at 350°F until golden brown.
During last 10 minutes of cooking the chicken, heat the Campbell's Nacho Cheese Soup in a medium sauce pan. For added spice, add 1/4 stick of Velveeta pepper jack cheese to the Campbell's nacho cheese and melt both together.
When the chicken is done, transfer to a serving dish and pour the nacho cheese over the chicken.
Voila! you're done!
Serve with Spanish rice and re-fried beans for a real Southwestern treat.
Note: If you don't have Velveeta pepper jack and want to spice things up, add a tablespoon of jalapenos (or to taste) to the melted cheese.
Why don't you try one of thoes 'skillet' creations that are in the freezer section? They are really high in fat and sodium though.

Okay I really shouldn't be doing this because it's my secret special recipe....but it's so easy and delicious, so I will share.
Shrimp Etoufee'
Ingredients
* 1 lb medium (no shell) shrimp
* 1 lb of rice
* 2 cans Campbells Cream of Mushroom
* (2) onions
* (1) red bell pepper
* (1) green bell pepper
* (1) yellow bell pepper
* (1) orange bell pepper
* 1 box of sliced mushrooms
* AND IF YOU LIKE IT SPICY (1) Habanero Pepper
First of all you can sautee the onions and bell peppers togther in a sauce pan with 1/4 stick of butter for about 10 minutes, you do not want the veggies to get to mushy. Do this at medium heat...
Then add the shrimp lightly sautee, do not cook all the way through, just about 5 minutes with the veggies.
Next add the cans of cream of mushroom and box of mushrooms.
Simmer (low-medium) heat for about 15-20 more minutes until the sauce gets watery.
Let it cool for about 15 minutes, you will know it is ready because the sauce will thicken once cooled.
I hope you know how to cook rice to go with this,, but just in case....
(High Heat)Get amedium sized pot and fill half with water, add one half stick of butter and 2 teaspoons of salt. let the water boil for 10 minutes then add the rice.
Let the rice boil for about 5-10 minutes with high heat until it is visably bubbling with heat.
Next reduce the fire to low heat and cover the pot for about 15-20 minutes.
Check the rice and when it is fluffy not grainy, you can get ready to eat!
Pour the Shrimp Etoufee' over the rice for an extravagant meal your man is sure to love! ♥
Chili :
2 LB. Ground Beef {Ground Chuck} (Give or take,depending)
2 Packages of Chili Seasonings {1Hot,1 Mild} (McCormick)
2 Cans of Chili Ready Diced Tomatoes
2 & 1/2 Can Of Chili Ready Chili Beans {Mild} (Bush's)
1 Box Of Thin Spaghetti
1-2 Yellow Onions, Chopped Small
2/3 Bottle Of Tomato Juice
2-2 1/2 Cups Of Warm Water
2 Can Of Tomato Sauce
1 Jar of Chili Sauce
2 Teaspoons Ground Red Pepper
2-3 Tsp Ground Black Pepper
1 Tbsp Of Chili Powder
1/4-1/2 Cup Tomato Paste {Optional} (Used as a thickener)
1/2 Tsp Sugar (optional)
1/2 Tsp Cumin
1/2-1 Tsp Of Paprika
1-2-3 Tsp. Of Tabasco Hot Sauce {Or to taste}
Since this includes so much seasoning it is okay to use leaner meat.
Pre-heat A large Skillet to Med Heat.
Rough Chop the Yellow Onions while the skillet heats.
Brown the Ground Chuck
When it is almost all brown add 1 package of McCormick
Chili Seasoning {Mild},1/2 jar of the chili sauce,1-2 tsp of tabasco,mix thoroughly,add chopped onion,,allow flavors to mix throughout.
Since the
meat in chili is usually bland,I have found this prep method very effective in helping the flavors be more bold
In a seperate pot,pour tomato juice,the water,1/2 package of the hot chili seasoning mix,1/2 jar of chili sauce,the tabasco pepper sauce,black pepper,cumin,sugar,ground red pepper,chili powder,cans of the tomatoes,can(s) of the beans,mix thoroughly on low heat until the meat is done,when the meat is done,then add it to the pot. I don't drain since I use lean meat. But you can if you want.
Make sure to drain the tomatoes and bean cans,you don't need the excess liquids,unless you want them.
Heat to med-low for about an hour,or until you think it is done enough to your taste, you want to keep it at a low simmer for all the flavors to infuse together I usually let it cook covered for about 1 hour & 1/2. Stirring frequently.
Make sure you taste the chili in between the seasonings because you may find that you like a more mild chili,or a more heated one. Or may prefer to leave one seasoning out all together.
If you wish,boil some thin spaghetti to go in it,but leave seperate, you can also top the chili with cheddar cheese,sour cream,crackers,fritos are my personal fav.
And green chili's for the more adventurous.

For tonight: go to your grocery store and buy a pre-roasted chicken in the deli section. The deli also has many delicious side dishes such as salads, potato salads, coleslaw, vegetables of all types, and desserts. The deli has baked ham and pre-cooked roast beef. You can have them cut thin for sandwiches or thick for a hot meal.
Check out the frozen dinner section too. Frozen dinners have come a long way and are now very good. So good that you can eat them every night. Just add a veggie or a salad and a dessert to make it a full meal.. Our favorite brands of frozen dinners are Marie Calendar, Stouffer's, Michael Angelo.
For the future:
Smithfield, Hormel, Armour have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen.
Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy, a vegetable, cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.

Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat meal into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Be sure to read the booklet that comes with the crock-pot which can be bought at your grocery store or places such as WalMart. Here are some recipes for you:

Three Easy Steps To Stove-Top Skillet Cooking
(Pan-Broiling, Sautéing)
Heat heavy nonstick skillet over medium heat for 5 minutes. Do not add oil or water; do not cover.
Season beef straight from the refrigerator with herbs or spices, as desired. Not salt.

Cook 4 minutes each side for rare
More for medium or well-done
