Healthy, Vegetarian, Dutch Oven/Camp Recipes?
Can anyone share or point me in the direction where I can find healthy, vegetarian dutch oven recipes to make over a campfire? We'd like to find something that we can cook and eat while camping...

How about vegetable stew with potatoes, carrots, onions, diced tomatoes and seasonings?
that's a hard one Dutch ovens where meant for meat they tend to make even tough meat tender. most of what you eat can easily be carried in and cooked on something lighter.you could try some slow cooked baked beans with tofo.
I can't find the recipe but the best peach cobbler I ever tasted was cooked in ours when we went camping in my younger days....

Make a black bean soup/chili... with 3 can black beans, 2 cans diced tomatoes, one can of Rotel for heat, 1 -2 cups corn, 2 tbl. cumin, 1 can chicken broth, 3 cloves garlic and 1 large onion. (2-3 cups water)
It will stand up to lengthy cooking time and get better the older it is. Very healthy, low fat, high in fiber and protein.
There is a really good thing we used to make at wilderness camp...
You build up a good fire and cook on top, make it in a large pot, such as you would use on the stovetop, but you could use a dutch oven just as easily, in the fire or under the ground.
It is a rice and lentils dish with cabbage and broccoli and carrots, onion, garlic, parmesan and whatever seasonings float your boat. At camp we used beef or chicken boullion, but that was mainly a salty flavor and you could just as easy skip it or sub with Lawry or other seasoned salt or Mrs Dash or whatever. That seems pretty self-explanatory to me, and I suck at strict recipes but some tips with it...
Add equal parts of rice and lentils to a large pot, twice as much water as these, and cook until they are about 5-7 minutes from done. Then add as much of the veggies as you like, lid the pot, reduce the fire, cook veggies to your desired tenderness, and sprinkle the cheese on at the end per serving.
You might want to toss some beano in the pot...PEEEUUUU but it tastes so good.
This is very filling, good on a cooler night, excellent for winter camping which I know is not the season. Try it in the fall!
Another good idea is to try your hand at a minestrone soup, can't be all that hard, but I would be careful with it after adding the pasta. Any stew or soup is going to be highly adaptable to your preferences.
A resource to check is vegetarian crockpot recipes. The dutch oven is, after all, a wilderness crockpot, but is also an excellent piece of gear to use for desserts.
