I am making fresh french fries in my skillet (meaning i cut up raw potatoes and want to cook them.. :] ) The recipe calls for 4 cups of vegtable oil... but i only have one cup... do you have any substitutes that i can use to cook it in other than vegt. oil?!?!?

Crêpes de la Vanille
Ingrédients :
1 ½ cups du lait
3 l’œuf yolks
2 tablespoons vanille extract
1 ½ cups all-purpose flour
2 tablespoons sugar
½ teaspoons le seul
5 tablespoons la beurree, melted
Directions :

I more than often bake up sweet potato french fries, but regardless of whether I use sweet potato or regular fries I have a hard time keeping them crispy and cruncy (we dont like large soft ones). I dont have a mandoline or any appliance cutter so I usually cut them by hand into small thin strips. I normally brush them with olive oil and season with salt, pepper, and ground cumin.
So how do I cut them and bake them in a way that they come out crispy without adding a heavy batter or frying them? Also if you have interesting recipes that would be cool.
One of my favorite recipes for lamb! But what to serve with it. I'll most likely find a Savigaun Blanc since my mother only likes white and doesn't care about compatibility....but I want to find a proper red to go with a robust flavored lamb (by the way you have to try this recipe, Julie Childs French cooking). We'll serve new potatoes roasted with butter and parsley, string beans and a side dish of gingered cranberry, another fav. So...full bodied red? Something more subtle? I'm inclined to French wines or other foreign wines, honestly don't like many domestic ones. Thanks for your input! X-mas day is so close hope everyone is in the spirits!

My Grandmother used to make THE best French Toast in the world. I don't have the recipe and everytime she wanted me to cook...well, I was a tomboy....I had better things to do than cook!!!
I did make it a couple of times however. And I distinctly remember Gram using flour to help it rise. I also remember her adding other ingredients that seemed odd - until she explained them. But heck if I remember what they were. I remember it had a very distinct taste to it.
*Gram was from Canada and was French Canadian and that's where the majority of her recipes are based from if that helps...

Has anyone used the flour and if so how much and at what point do I use the flour? Do I mix it in with the egg mix or after i've dipped the bread in the mix do I coat it in the flour (for some reason that sounds more familiar).
Today I made a recipe for French dips with the beef cooked in the crock pot. The recipe called for a rump roast (fat trimmed), 1 can beef broth, 1 can condensed French onion soup, and 1 beer, all thrown into the crock pot and cooked on low for 7 hours. The meat was cooked but it was tough. It didn't fall apart like I expected. The au jus was bland. It didn't have that strong onion flavor. What went wrong, and what can I do to improve this recipe?
Me and my 4-H group are doing an international cooking project that I have chosen to do French cooking. I want to make a beverage and I've been looking around online for a good beverage, but they are all alcoholic. Is there any good substitute for Alcohol? Some recipes call for brandy, but i cna't serve that because I and the people i'm serving are all minors.

***a generous dressing of olive oil, white wine vinegar, salt & pepper, and a good lot of fresh chervil ...
use garlic if you dare, but the mussels are quite enough by themselves
* put the dressing on the warm salad and let the flavors blend a little while at room temperature...

I have noooo idea what this means...its a 9 by 13 pan.. do i cut the top layer off and have one huuge cake or split the pan by cutting down the middle creating a left and right half? I found a recipe for a Fench dish on the internet (supposedly authentic French recipe) and it calls for brown onions.
Here's my question to all you chefs......what the heck are brown onions? I know red (purple). yellow and even green (shallots) but I have never heard of a brown onion.
If someone could clarify this for me I would greatly appreciate it as my daughter is cooking this recipe as part of her French launguage project.
Oh, one more question.....if a recipe calls for roquefort (I know I spelled in incorrectly) cheese, is there a good substitute for this cheese or any recipe that calls for an aged cheese? Unfortunately my system can no longer handle aged cheeses so I can no longer enjoy my favorites (cheddar, bleu, parmagiano reggiano, etc.). I can eat Monterey Jack, Swiss (have not tried aged Swiss, just the old deli Swiss), etc.

The recipe called out to use brown onions. It is suppose to be an authentic French recipe. So my question was "what are brown onions" as I have never heard of brown onions.
As far as the aged cheeses, it's not that I can't tolerate them as I love them but my system no longer tolerates them. I could eat cheddar & blue cheese until the cows come home but my system doesn't like them anymore.....unfortunately. So what I was trying to find out was what are some good cheese to substitute with. For instance if a recipe calls out for cheddar what would be a good substitue so as to not really change the taste of the original recipe, same with if it calls for blue cheese, what would be a good substitute so the taste of the recipe does not change or not change dramatically (trying to keep to the original recipe & taste but having to substitute certain aged cheeses). Does Feta cheese work well as a substitue for Blue cheese, etc?
