Country French cooking.?
Are their any French folks out there.That know what country French cooking is....like rustic Rillettes,Confit of Chicken gizzards?...My grandmother would make wonderful soups...one of which Im sure had tapioca in it...does this ring a bell anyone?
Love to hear a few recipes.... ANY recipe...of country French cooking.

The recent issue of Gourmet magazine has a lot of country French recipes. It inspired me to furthur research the Jura region they emphasized. The link lists local foods with a soup made of grilled corn flour. Some of the dishes have further links for recipes. Hope that helps, the food looks delicious.
