In-N-Out french fry recipe?

What's In-N-Out's procedure for cooking their french fries? Temperature? Time?

this is a best guess from someone who has sampled my weight in in-and-out fries and has made fries at home. they start with kennebec potatoes which you can get pretty easily. they use vegetable oil. they heat the oil to probably around 375 degrees. they also probably soak the potatoes in water for 10-20 minutes. and i think that the primary reason they are so amazing is that (this is a guess) they fry them twice...first for 5 minutes, then another 3 minutes.
