BANANA-CINNAMON SNACKING CAKE
Non-stick vegetable oil spray
1 1/2 c. all purpose flour
1/2 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1 c. plain non-fat yogurt
3/4 c. mashed ripe banana
2 tbsp. vegetable oil
1 lg. egg
1 tsp. vanilla extract
Powdered sugar
Preheat oven to 400 degrees. Spray 9" square baking pan with vegetable oil spray. Combine flour, sugar, baking powder, baking soda, cinnamon and salt in large bowl. Whisk together yogurt, banana, oil, egg and vanilla in medium bowl. Pour over dry ingredients and stir gently until just blended. Do not overmix. Spread batter in prepared pan. Bake until top of cake is light brown and edges begin to pull away from sides of pan, about 20 minutes.
Cool cake in pan on rack 10 minutes. Loosen sides of cake with spatula and turn out onto rack. Invert cake right side up and cool completely. Transfer to plate. Sprinkle lightly with powdered sugar.
Sounds like you are describing something similar to a Bavarian speciality called "Kaiserschmarren", a lumpy egg batter-based dish. You can find the recipe for this online by googling it. If interested, email me and I can translate it for you. By the way, adding cinamon is an American characteristic. Americans seem to go nuts with that stuff (along with peanut butter.) Cheers!
here you go, you can top with whatever fruits you like. Apple butter or apple pie filling would be great to
