What kind of potatoes do I use for German Potato Salad?
Red or Brown? The recipe says to slice the potatoes....don't you think chunks would be better?

Typically Idaho White potatoes. But I d o agree with you as to chunks vs slices.
I would say red potatoes. Typically German potato salad has the skins on and red potato skin is more tender than brown.
waxy red ones, or "new" potatoes
Too much red can be overbearing so I mix the red and brown, leaving skins on and I do chunk them. Have fun cooking and enjoy.

white potatos
New potatoes hold together better. Either red or brown skin. They have a firmer texture and slightly sweeter taste. Traditional German potato salad is made with sliced potatoes. (Again, a reason for using the smaller new potatoes).
Use red with the peelings. They have a sweet taste that will enhance the flavor. I cut mine in half, boil them until slightly tender, drain well then cut them in chunks. My recipe is one that was used during the depression and it's absolutely wonderful. I've been making it for 20yrs. and everyone loves it. If you're interested, I'll write it out for you. Let me know.
GERMAN POTATO SALAD
10 boiled potatoes, sliced (Idaho Red the best)
5 tbsp. oil
5 tbsp. cider vinegar
5 tbsp. water
1 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onions
5 cloves of garlic
(Hint: Sprinkle salt on them and smash with the flat of a lg. knife)
1 tsp. sugar
For best results, add the potatoes and dressing in layers in a bowl to minimize the stirring and breaking of potatoes.

Always use red for salad. The white-brown ones get mushy. German potato salad is traditionally sliced but chunks are ok if small.
