* 2 eggs slightly beaten
* 3 cups shredded coconut
* 24 - 6 inch wooden skewers
PREPARATION:
Insert one skewer in each shrimp leaving 2-3 inches of the skewer protruding..
Dredge shrimp in flour, then in eggs. Roll the shrimp through shredded coconut, covering them thoroughly.
Deep fry shrimp at about 375 F, until they are brown.

She's 11--you don't need anything elaborate. Throw different lettuces and spinach leaves with strawberries, sliced almonds or macadamia nuts (Hawaiian nut) and some strawberry vinegarette and there's your salad. Make pineapple upside down cake for dessert if you don't want to do a traditional cake, find a Hawaiian punch recipe on allrecipes.com, and make homemade Hawaiian pizzas or order a few from Little Caesar's--you can buy premade pizza crusts (3-5 dollars at the grocery store) and some bottles/cans of pizza sauce. Slather it on and top with canadian bacon, pineapple, and cheese. You could also find a recipe online for a mango or pineapple salsa. It doesn't have to be a major and elaborate meal--she's eleven! Pizzas are just fine! Most kids won't want to try new foods, anyway, so it'd be smart to make a few plain cheese pizzas, too.
Fruit and veggie platters are always a hit, just use a lot of tropical fruits--mangoes, bananas, pineapple, star fruit, and then some strawberries and melons because most kids like them
Smoothies would be good--you could make a variety of different flavors and you could make it before the party starts and just store them in pitchers in the fridge. You can also make the pizzas ahead and stack them in the fridge in plastic wrap and then pop them in the oven just before it's time to serve. See if you can borrow a few pizza ovens from neighbors/friends, plus use your actual oven. With that many people, there will be eating in shifts, anyway.
