Indian recipes??? help please!!!?

I dont know how to cook indian food and I dont know where to get all the ingredients from whwre i live (texas) what are some good recipes easy to make and delicious??? Im a vegetarian...thank you!!!

There is a great book "Healthy South Indian Cooking" by Alamelu Vairavan it has a lot of great recipes that are easy to make and are easy to follow. You can find some good recipes and information on indian spices and cooking at the site I linked below. They even sell the spices you need, but I'm sure there is a local indian store you can get them in cheaper. Here is an easy/beginner recipe.... Crock Pot Indian Vegetable Curry Crock pot vegetable curry is a one-pot meal that you can prepare in the morning and will fill your home with the aroma of Indian spices all day long. This recipe is both vegetarian and vegan. Serve over rice if desired. INGREDIENTS: 3 potatoes, chopped 1 cauliflower, chopped 1 1/2 cups green peas 3 tomatoes, chopped 3/4 tsp turmeric 1/2 tsp chili powder 1 1/2 tsp cumin 1 tsp curry 1 cup water PREPARATION: Place all ingredients in a crock pot or slow cooker. Cook on low for 5 to 6 hours.

Serves: 4 Cooking time (approx.): 12 minutes Style: Indian Vegetarian (Gujarati) 4 medium eggplants sliced 4 medium potatoes peeled and sliced 4 medium tomatoes sliced 1 teaspoon(s) each of red chilli, turmeric, coriander and cumin powders 1 teaspoon(s) hot spice mix (garam masala) powder (optional) 4 tablespoons oil 4 cups water sugar and salt to taste finely chopped coriander leaves to garnish Heat oil in a pan. Add the tomatoes,spices and little sugar. Fry on medium heat for 3 minute(s) till the tomatoes are soft. Add potatoes and eggplants. Fry again for about 5 minutes. Add the water and cook covered on medium / low heat for 4 minutes or till the vegetables are cooked. Garnish with finely chopped coriander leaves before serving. Serve hot with: Sprouted Field Beans Pulav (Vaal ni Dal no Pulav), white rice, or Indian bread (Roti). or
