My lovely irish mom used to make corned beef and cabbage every St. Patricks day. The way she prepared it seemed effortless and the meat was so tender - melted in your mouth!! She said there was a trick to it. She passed away and the recipe was lost with her. Any help is appreciated.

I am making pork ribs and cabbage to celebrate St. Patrick's Day, but I forgot to soak the meat overnight like the recipe says! It's too late now, so do I just go ahead and rinse & cook it? What will it be like, and what exactly does the soaking do, anyway?

Me and my friends play a game; each night somebody closes her eyes, and puts her finger on the map. She cooks food from whichever country she has picked. And today was my turn and I picked British Isles (well, my finger was touching only Scotland, but they accept all of them, so it can be Welsh, English or Irish as well as Scottish). by writing authentic, i mean i have searched for recipes in books, and on the net, but havent been happy with them. they always seem "white"??No racism intended - im irish - but alot of them seem unauthentic - is all
ALSO....why are chinese people so secretive about their cooking? i was watching my favourite chinese take-out man cook my dinner, i was trying to see what he was using, but it[ingredients]was all in like plastic containers and metal bowls - didnt really reveal much - so ive come to the conclusion chinese people/chefs arent sharing....!!

I'm Irish. I like potatos. I like that my lineage grows them, knows how to cook them, and eat them in great quanity. I love starchy, heavy, creamy, well made mashed potatos. I love french fries (well made, crisp, interesting infusions in the oils used in frieing the powerful food subtance). I love potatos latkes (some people have asked me 'wha" ? in confusion and I feel pain they have never had lard pan fried onion and potato latkes in the winter holidays and am stunned some people are deprived throughout thier lives.) I love them with a warm apfalwein while the air is freezeing because it bring christmas in Germany and at the markets with my husband and infant child picking a tree and lots of lights.

Who says I eat them often? and just because i have favorite recipes does not mean I lack moderation. Besides, once a week or everyday it's how your personal exercise and genetics are that inclines you towards diease, diet is relatively easy to control. How rude a observation. When I was in Ireland a couple of years ago, I had these great potatoes and cannot find a recipe. They seemed buttery. The potatoes were peeled and the outside was slightly chewy after being cooked. I am not sure if they were boiled, then baked, or baked without skins, or a combination of the two. It didn't seem like there were any seasonings, but were served with many different dishes. Does anyone know what I'm talking about and if so, how to make them?

It's that time of year again, actually for me it's ALL year. I just LOVE irish food!!! I used to cook in an Irish pub and we just had the most AMAZING recipies! Too bad I can't remember how to make them!!! I am looking specifically for a good lamb stew, pasties (I like veggie ones the best) and sausage rolls. But any good recipies would be AWESOME! I have scoured the internet in search for the perfect recipies with no luck, hopefully I will find the luck of the irish here!
