Irish Cooking Recipes Question And Answer
My company is having a bake-off at our X-mas party and I need a good dessert recipe! I need some GREAT ideas!
Keep in mind that Im not an expert cook and I dont have a lot of cooking untensils in my small apartment but Id still like to make something nice.
Id like to make something with liquor like Bailey's Irish Creme or Kahlua, Egg Nog flavor..etc. ..I wanna win! Thanks!

Chocolate-Cherry Bar Cookies with Hazelnuts
2 1/2 cups unbleached all-purpose flour (12 1/2 ounces)
3/4 cup superfine sugar (5 1/2 ounces)
1 cup dried chopped cherries
1/4 teaspoon table salt
16 tablespoons unsalted butter (2 sticks), cut into sixteen 1/2-inch pieces, at cool room temperature (about 65 degrees)
2 teaspoons vanilla extract
2 tablespoons cream cheese , at room temperature
1 1/2 cups semisweet chocolate chips (9 ounces)
1 1/2 cups hazelnuts (7 ounces), toasted, skinned, and chopped
In bowl of standing mixer fitted with flat beater, mix flour, sugar, cherries, and salt on low speed until combined, about 5 seconds. With mixer running on low, add butter 1 piece at a time; continue to mix until mixture looks crumbly and slightly wet, about 1 minute longer. Add vanilla and cream cheese and mix on low until dough just begins to form large clumps, about 30 seconds.Press dough in even layer into parchment-lined 17 1/2 by 12-inch baking sheet. Bake cookies on lower-middle rack in 375-degree oven until golden brown, about 20 minutes. Immediately after removing baking sheet from oven, sprinkle evenly with chocolate chips; let stand to melt, about 3 minutes. Using offset icing spatula, spread chocolate into even layer, then sprinkle evenly with chopped hazelnuts. Cool on wire rack until just warm, 15 to 20 minutes. Using pizza wheel, cut into 1 1/2-inch diamonds. Transfer cookies to wire rack to cool completely.
White Chocolate Macadamia Nut Brownies
5 ounces white chocolate
1/2 teaspoon vanilla extract
1/4 pound butter, melted
2 eggs
1/4 cup granulated sugar
1 cup flour, combined with a pinch of salt
5 ounces macadamia nuts
Preheat oven to 350 degrees F. Butter and flour an 8-inch baking pan.Melt the white chocolate in a bowl placed in a pot of barely simmering water. Remove from the heat and add the melted butter and vanilla extract and mix well.Mix the flour and nuts until they are evenly dispersed.In a mixing bowl, cream the eggs and sugar until it is thick enough to form ribbons. Gently fold in the melted chocolate mixture until incorporated. Fold in the flour and nut mixture and pour into the prepared baking pan. Bake until a wooden pick inserted in the center comes out clean (about 25 minutes). Remove from the oven.
Chocolate Chip Cake
2/3 cup butter
3/4 cup packed brown sugar
3/4 cup white sugar
3 eggs
1 1/2 cups all purpose flour
3/4 cup whole wheat flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 1/2 teaspoons Vanilla extract
1 cup semi-sweet chocolate chips
Preheat the oven to 350 degrees F. Grease and flour two 9 inch round pans. In a large mixing bowl, cream together butter and sugars. Beat in the eggs. In another bowl, sift together the flours, baking powder, and salt. Add this alternately with the milk to the creamed mixture. Stir in the vanilla. Chop the chocolate chips coarsely and add to the batter. Pour batter into prepared pans, and bake for 25 to 30 minutes, or until knife inserted in middle comes out clean. Fill and frost with white chocolate frosting and sprinkle with chocolate chips.

It's really easy...and there's never any left wherever I take it! No liquor in it...but maybe you could add some.

Honey Grahams
2 small boxes of instant vanilla pudding
2 2/3 Cups milk
12 oz Cool whip
one container of Fudge frosting
Spray a 13x9 inch dish with pan spray. Line bottom with whole graham crackers. Mix pudding with milk. Beat well, or just stir a lot. Stir in cool whip. Pour 1/2 mixture over layer of crackers. Then put another layer of graham crackers. Then rest of cool whip udding mixture. then put another layer of grahams.
Put container of chocolate frosting in microwave. Nuke it till it melts. Pour over top layer of grahams. Refrigerate. it's better to refrigerate overnight.
Have you ever heard of Strawberry Soda pop cake? I know it might not sound the best but it is delicious!
What you need:
1 yellow cake mix
1 bottle or can of strawberry soda pop ( you won't use the whole bottle)
2 pkgs. of instant vanilla pudding
2pkgs. of instant strawberry jello
1 container of cool whip
First you bake the cake. Then you take it out and punch little holes all in it. Next, you mix the jello up (just the first step, the hot water) and pour it over the cake. Then you pour about 2 cups of strawberry pop all over the cake. It will soak into the cake. Then put the cake in the refrigerator until it gets cold.
Next put the icing on.
ICING:
Mix the pudding up as directed on the box for a pie then mix the pudding and whip cream together.

I have a decadent cake that Alexandra Ivanovna taught me (my grandmother's friend) and it takes 13 eggs and 2 sticks of butter. You cut it in half, so you can layer in the coffee filling. (by the time it's thinned out in the 2nd stick of butter and 3 eggs, it tastes like milk chocolate, but I'm sure you could lace it with Grand Marnier or other complimentary liquor to spice it up. IF you put too much coffee (it only calls for 3 tables of instant) it does tend to bite of coffee. So, a liquor would make it seem 'on purpose'. (humm, I'll have to try that.) It's a recipe that I had to copy while watching her make it...it's not hard, but a bit involved. I'd give you all the tips and warnings that you would need.. (like make sure the cake was Totally cool or all that butter filling will melt into the cake and become hard, stiff and NOT so good.) Don't need utensils but several bowls. vr66@yahoo
I don't know any with egg nog or anything but i'm a major like to bake a lot. And here's a good recipe that's easy to make.
Decadent triple layer mud pie
prep: 15 min. total: 3hrs 15 min. (including refrigeration)
3 squares Baker's semi-sweet baking chocolate, melted
1/4 cup canned sweetened condensed milk
1 oreo(or any chocolate pie crust) Pie crust(6oz)
1/2 cup chopped pecans,toasted(toasting is optional)
2 cups cold milk
2 pkgs.(4 serving size each) Jell-o chocolate flavor instant pudding & pie filling
1 tub(8oz) cool whip whipped topping,thaed,divided.
Mix chocolate and condensed milk until well blended. Pour into crust;sprinkle with pecans.
Pour milk into large bowl. Add dry pudding mixes. Beat with wire wisk 2mins or until well blended.(Mixture will be thick.)Spoon 1 and 1/2 cups of the pudding over pecans in crust. Add half of the whipped topping to remaining pudding;stir with wire whisk until well blended. Spread over pudding layer in crust; top with remaining whipped topping.
Refrigerate 3 hours. Store in refrigerator.

It's not exactly the healthiest recipe, But you can subsitute with a different cool whip. You could whip your own if you'd like.

Raw apple cake
You will need:
1 cup cooking oil
2 cups sugar
3 cups self-rising flour
3 eggs,beaten
1 tsp. cinnamon
3 cups chopped apples(peeled) (you can use any kinda of apple that backs good, I recommend winesap apples.)
1 tsp. vanilla
1 cup chopped pecans
Mix flour,sugar and cinnamon in one bowl(big). In one small bowl beat eggs;add oil and vanilla. Mix liquid mixture into the dry mixture. Fold in apples and pecans(batter will be stiff). Bake at 325degrees in a greased(buttered(an floured tube pan for approximately 1 hour and 15 mins or until knife inserted comes out clean.
Glaze:
1 stick butter or margarine
1 cup packed brown sugar
2-3 tablespoons milk
While cake is cooling,melt butter and brown sugar in a sauce pan;add milk. Heat until boiling(do not boil let long). Pour(drizzling is best) over cake and let cool. If possible, enlose cake in a cake box to cool after glazing it. The cake's heat will create steam, infusing the cake with moisture.

"Eggnog Cake"
2 cups all-purpose flour
1 1/2 cups sugar
3 1/2 tsp. baking powder
1 tsp. salt
1/2 cup shortening (half butter or margarine; softened, if desired)
1 cup milk
1 tsp. vanilla
3 eggs (1/2 to 2/3 cup)
Heat oven to 350*. Grease and flour baking pan, 13x9x2", or 2 round layer pans, 8 or 9x1 1/2".
Measure all ingredients into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes high speed, scraping bowl occasionally. Pour into pan(s).
Bake oblong 40-45 minutes, layers 30-35 minutes or until wooden pick inserted in center comes out clean. Cool.
VARIATIONS -
Eggnog Cake: Follow recipe above, except - add 1 tsp. nutmeg and 1/4 tsp. ginger to ingredients in mixer bowl and substitute rum flavoring for vanilla.
Frost cake with Creamy Fluff Frosting: In small mixer bowl, chill 1 (7.2 oz.) pkg. fluffy white frosting mix (dry), 1 tsp. rum flavoring and 1 1/2 cups whipping cream at least 1 hour. Blend on low speed; beat on medium speed until soft peaks form. Because of whipped cream in frosting, cake must be kept refrigerated.
"Eggnog Pie"
9" baked pie shell
1/2 cup sugar
1 envelope unflavored gelatin
1/2 tsp. salt
3 eggs; separated
1 1/4 cups milk
1 tsp. light rum or 1/2 tsp. rum flavoring
1/4 tsp. cream of tartar
1/2 cup sugar
1/2 cup chilled whipping cream
Nutmeg
Stir together 1/2 cup sugar, gelatin and salt in saucepan. Blend egg yolks and milk; stir into sugar mixture. Cook over medium heat, stirring constantly, just until mixture boils. Place pan in bowl of ice and water or chill in refrigerator, stirring occasionally, until mixture mounds slightly when dropped from spoon. Stir in rum.
Beat egg whites and cream of tartar until foamy. Beat in 1/2 cup sugar, 1 tbsp. at a time; continue beating until stiff and glossy. Do not underbeat. Fold gelatin mixture into meringue.
In chilled bowl, beat cream until stiff; fold into meringue mixture. Pile into baked pie shell. Sprinkle generously with nutmeg. Chill at least 3 hours or until set.
"Spoon-Up Eggnog" - 12 servings
4 eggs; separated
1/2 cup sugar
1/8 tsp. salt
1/2 cup golden rum or, if desired, 1-2 tbsp. rum flavoring
2 cups whipping cream; whipped
Beat egg whites until stiff. Beat egg yolks, sugar and salt until very thick and lemon-colored; stir in rum.
Fold egg yolk mixture into whipped cream. Fold egg whites into egg yolk-cream mixture. Chill thoroughly.
Serve in cups, with spoons. If desired, sprinkle with nutmeg.
WHITE RUSSIAN CAKE
3 T Kahlua
1 1/4 c Sugar
2 T Vodka
1/2 c Butter
3 oz White baking bar w/cocoa cho
2 tb Shortening
2 c Sifted cake flour
3 Eggs
3/4 ts Baking soda
3/4 c Buttermilk
1/2 ts Baking powder
1/3 c Apricot jam
KAHLUA WHITE RUSSIAN CREME
2 c Whipping cream
1/4 c Kahlua
1/2 c Powdered sugar
2 tb Vodka
White baking bar w/cocoa shaved into curls (I use potatoe peeler for this) In med heavy saucepan combine Kahlua, vodka and 3 oz chopped white baking bar. Cook and stir over low heat till baking bar is melted, cool slightly. Grease and lightly flour three 8x1 1/2 round baking pans (I use my 9") In small bowl stir flour, baking soda, and baking powder, set aside . In large bowl combine sugar, butter and shortening, beat w/electric mixer on med spd till light and fluffy. Add eggs, ONE at a time, beating till combined. Beat in the cooled liqueur mixture. Alternately add flour mixture and buttermilk to egg mixture, beating on low to med spd after each addition till combined. Spread the batter evenly in pans. Bake at 350~F for 20-25 mins or till toothpick in center comes out clean. Cool the cake layers in the pans on wire racks for 10 mins. Remove from pans and cool completely on wire racks. To assemble, place one layer, bottom side up, on a serving plate. Spread layer w/about 3 TB of the jam and 1/3 C of the Kahlua White Russian Cream. Place a 2nd layer on top of first, bottom side up, spread w/remaining jam and 1/3 c of the cream. Top w/remaining cake layer, bottom side up. Swirl remaining cream onto the top and sides of cake. Decorate top (I do the sides too, looks soooo pretty!) w/baking bar curls. COVER AND CHILL FOR UP TO 24 HOURS!!! To serve, cut into wedges, dipping knife into water between slides. 12-16 servings. KAHLUA WHITE RUSSIAN CREAM In chilled med bowl combine Whipping cream, and sifted fpowdered sugar. Beat w/electric mixer on low speed until thickened. Gradually add kahlua and Vodka, beat on low speed until soft peaks form. DO NOT OVERBEAT.

many company' s frown upon liquor at office party's especially if it is during business hours. here is one that is pretty easy and alot of chocolate lovers like it
ecstasy cake
prebake a devils food or chocolate cake according to box directions using a 13x9 or 12x9 pan (disposable aluminum works really well and you don't have to worry if you forget it)
take a drinking straw and poke holes about 1 1/2 " apart in cake.
then take 1 can sweetened condensed milk and pour SLOWLY into holes. then take 10 oz caramel syrup and do the same. top with a nice layer of cool whip. refrigerate overnight
This recipe has no alcohol in it but you might like to give it a try any way:
Cappuccino Cake
Preheat oven to 350
1 stk. soft butter
1/3c. strong coffee (2 rounded tsp. coffee 6 oz. water)
1stk. soft margarine
2 c.sugar
1tsp. vanilla
4 eggs
2 1/2c. all purpose flour
1c. milk
1/4tsp. cinnamon
2 1/2tsp. baking powder
1/2c. semi sweet mini choc.chips
Frosting:
1stk soft butter
1c. sugar
1stk soft margarine
1/3c. milk
1/3c strong coffee(same as cake)
2tsp. vanilla
1. combine flour,salt,baking powder,and cinnamon
2. cream butter and margarine,add vanilla,sugar
and eggs.Beat well
3. combine coffee and milk and add to egg and sugar mixture
alternating with flour mixture.
4. Stir in choc. chips
5.Pour into greased 9" round cake pans and bake for 30 min.
test with tooth pick.
7. cool for 15 min, remove from pans and chill
8. Beat frosting ingredients together for 5 min. or until
same consistancy as whipped cream.
Frost cake and chill well before serving.
