Where can I find good Vietnamese recipes or tips on how to cook Vietnamese food?

I walked into a Vietnamese Supermarket today and was mind-boggled at all the crazy foods that I either had no idea what it was or I did know what it was- but didn't know was edible. I'm not a fan of Americanized versions of these foods and was hoping to find some source that teaches how to use these unfamiliar ingrediants. I'd especially like to get some answers from someone who regularly shops at any of these Asian market type stores. I'd be fine with any other Oriental styles as well: Thai, Chinese, Korean, and maybe Japanese.

Any good mantou recipes?

Let me preface by saying I'm no chef, and only started cooking this year. Mantou is a sort of steamed rice bun hailing from Japan. I recently went to a Japanese supermarket and picked up a package of frozen chocolate mantous out of curiosity, but the things are incredibly rubbery and bland by themselves. I'm interested in trying to do something to them to make them into really delectable treats, but any recipes I find on the internet are for making mantous from scratch, not doing something fun with already-made mantous. I tried coating it in butter and cinnamon powder, frying it, and then slathering it with chocolate syrup... And although that DID make it less rubbery, it still wasn't very amazing. Does anyone have any ideas on what I could do with these things? Even something geared away from a "sweet treat" would probably be OK as the chocolate flavor is so faint that it'd probably just disappear in the process of cooking it.

What exactly is Japanese rice?

I want to make sushi, and the recipe states that I need to use Japanese rice. I know not to use American rice; the confusion comes from whether I should use sticky rice (used in Chinese cooking to make lo mei fan in dim sum) or just regular, non-glutinous Asian rice. The recipe site I visited referred to Japanese rice as sticky rice, so now I'm confused. :/

Japanese Rice (Not Chinese!)??

There is an amazing little Japanese restaurant here in Richmond Hill, Ga. called Shintos they serve rice, veggies (sauteed zucinni and such), and a meat (shrimp, chicken, steak, etc.) OH and shrimp sauce! Their rice is incredible. It has no veggies in it, they are cooked seperate, there is no egg either, so, none of the recipes i find for are quite right, i believe it has soy sauce and they add a clear liquid while they cooking it (they cook it on a flat griddle like thing) maybe, seaseme oil??? Any thoughts on what the recipe may be??? There are NO VEGGIES directly in the rice.....the veggies are sauteed and served beside the rice...not cooked in it....Thanks for tryin =]

Hello, I was going through some recipes for different kinds of Japanese soups and stews and most of the recipes recommend cracking open a raw egg into each bowl right before serving. Does the hot broth cook the egg, and if so, does it taste good? I understand it's not a beaten egg, and I was hoping some one could explain the process in more detail and assure me that it's yummy and won't make me sick, lol.

I'm not looking for a recipe book, although some recipes would be nice. What I'm really after is a book that will teach me how to cook. I want something that covers the basics, like how to julienne a carrot and butterfly a trout, but also goes on to more advanced sauces and preparations. I'm open to professional cooking textbooks, if you can recommend a good one. Key qualities of the book: It should be mostly about European cuisine, as that is my primary interest. My girlfriend loves to make Japanese food and has her own books for that purpose. :-) It should be comprehensive and well-indexed, such that it can be used as a reference. Japanese Steakhouse Chicken/Steak/Shrimp Recipe?

I love to eat at a local Japanese Grill where the food is cooked in front of you. I would like to know how to make chicken/steak/shrimp taste as good as their food. I plan to help make this for a party. I plan to ask the cook next time I go but I was hoping someone here would know. I know the cook uses some sort of oil, butter, mushrooms, thin-sliced zucchini and onions. I'm not sure if any teriyaki or soy sauce is used... Or they use very little. Any help is appriciated.

What should I buy at the Japanese import store and how do I cook it?

All the food looks SOOOO good but I need recipes and I need to know how to cook it. I also don't know how to read the labels so I have to look up everything and write down the Japanese word so I can find it in the store. I can only recognize one thing by the packaging: natto. I am trying to find a recipe for how to make the rice served in Japanese restaurants (without the veggies, usually cooked with one egg) and also how to make the yum-yum sauce that is served with the rice. In Desperate Need Of A Difficult Japanese Recipe!?

Ok, for my year 9 International Cuisine technology project, I've been cooking Japanese dishes. For each dish, i have to create a time plan, evaluation, specification, etc. So far i've made 'Pork dumplings with Sticky Rice' and 'Terriyaki chicken with Sesame Green Beans'. Both were DELICIOUS and i got a 7A (my target level) for both. I want to try and push myself to an 8, but i can't find a suitable recipe. Does anyone have any suggestions? It needs to be something with lots of components, and it doesn't matter what kind of meal it is (so long as it's Japanese, or at least seems Japanese!) Thanks! Rach

Any information on chilies and peppers used in Japanese cooking?

I have a few Japanese-language cookbooks with recipes which use 'shishitou' - they look to me like regular supermarket green chilies but are used similarly to a vegetable, so are obviously not as hot. I usually substitute large green chilies from my local Indian grocers which have very little heat but otherwise with the flavour of a chili rather than a sweet bell-type pepper. Am I on the right tracks? Also, how hot are red tougarashi usually? In pictures these look like the fairly hot chilies I can get locally but even halving the amount given in a recipe the result was excessively hot, which seems unlikely to me given the fairly tame nature of "hot" Japanese curry roux. Finally I notice from the photgraphs that Japanese green bell peppers are different to the one available here - ours are large and thick fleshed, but the Japanese ones seem quite small and uneven, with a thin flesh more like chili peppers. Does anyone know if there is a corresponding difference in flavour? I have seen shishitou described in English as 'sweet' before; I guess what I am asking is are they really sweet like a bell pepper, or does 'sweet' refer to the lack of heat? The substitution I made was with a heatless chili - the flavour is chili not bell pepper, and other then the lack of heat these are not noticably 'sweet'. (Not a huge difference I know, but I am curious about the difference between ピーマン and ししとう) Also, when I ask about red peppers I mean fresh. Not often used I know, but I have a couple of recipes which do.
