How do i cook japanese steakhouse food?

In FL we have a favorite japanese steakhouse that we like to go to, i was wondering if anyone knows how to cook the food that they do.. i know its called Teppanyaki cooking but i cannot find a recipe for it anywhere..and also what kind of pan do i use? there is just something about the the ingreidence that they use on everything they cook, there is a orange powder that they sprinkle on everything and a brown liquid to but i m not sure what they are called, if anyone can help me out i would appreciate it thanks in advance

i'm not sure what the orange powder is but the brown liquid is most likely soy sauce.
I Hope this helps BROILED TUNA STEAKS WITH JAPANESE SAUCE 4 yellow fin tuna steaks, 1-inch thick Sesame oil 1 rounded tsp. cornstarch 1/3 c. rice vinegar 1/3 c. mirin 1/3 c. soy sauce 1 lb. spinach leaves, rinsed, stemmed and dried 1 (6 oz.) box Saffron Rice, cooked per box directions 3 tbsp. minced crystallized ginger Start coals, start rice. Make sauce: dissolve cornstarch in vinegar. Combine with mirin and soy sauce and simmer until mixture is a clear dark brown and thickened. Remove from heat but keep warm. Stem spinach leaves for 2 minutes. Grill fish rubbed with sesame oil over hot coals 5-7 minutes per side Assemble: Arrange a bed of spinach on each plate, place a tuna steak on top of spinach. Spoon a ring of yellow rice around plate. Spoon sauce over tuna and sprinkle with crystallized minced ginger. JAPANESE-STYLE FRIED CHICKEN 1 lb. chicken thighs 2 tbsp. soy sauce 2 tbsp. Japanese sake 2 tsp. fresh ginger juice, grate and squeeze out juice 5 tbsp. cornstarch Vegetable oil for deep frying Using a fork, prick holes all over the chicken. Cut into 2-inch pieces. Mix soy sauce, Japanese sake and fresh ginger juice. Steep chicken in the soy sauce mixture for 20 minutes, stirring occasionally. Heat vegetable oil to 330 to 340 degrees and fry slowly and well.
