What are our favorite every day meals and recipes..?
-favorite Japanese rice recipe* - Calrose rice -- 4 cups of rice and 5 cups of water.. wash rice and drain.. then add the measured water and let stand for half an hour in the summer -- 1 hour in the winter.. then bring the water to boil.. when boiling turn the heat down to a very very low simmer.. low as possible.. cook for 12-13 minutes.. take off heat and let stand for about a half an hour. Do not remove the lid while cooking at any point. Fluff rice with a scraping motion..

Faux Chicken Cacciatore
heat 1 T olive oil in nonstick skillet
add 1 sliced onion and 2 crushed cloves garlic
add chicken breasts or tenders, brown each side
dump on can of Italian seasoned tomatoes, cover, simmer until chicken is done. serve over spaghetti or rice

bake at 350º 1/2 hour, turn over, bake another 1/2 hour. serve with rice and a green veg
Our "default" dinner recipe that we make when we've got almost nothing in the house is a BLT with a cup of soup and a piece of fruit. I make a lot of soup from scratch so there's usually something in the freezer, but I'm not above opening up a can of Campbell's. ;) As a matter of fact we're having this meal tonight (didn't get around to shopping today..)
