I cook fajitas at home but they never taste like they do at the restaurant.
I marinate the meat and cook it seperately from the vegis. Also, mine aren't greasy and they need to be. We eat healthy every other day, on fajita day I want grease and guacamole! How exactly do mexican restaurants cook thier deliciously greasy fajitas? If someone cooks for a mexican restaurant and would tell me everything from the marinade to what kind of cooking surface, it would make me so happy! I cook a lot and I feel like I can figure about any recipe out. I can certainly make something that resembles a fajita, but it is no where near as delicious as any local restaurant's! A million thanks!
I wanted to make something yummy for my boyfriend this weekend...he is a fan of pasta dishes and a meat and potatoes kind of guy as well-o and mexican....basically anything. Please let me know some of your fav (not to hard to make) recipes!!

I'm going to cook some cheesy fries tonight with some taco seasoning on them, so I'm looking for a quickie Mexican-ish recipe using the following(not all need be included, it's just what I have on hand):
10 oz cooked, cut up chicken breasts
salsa
sour cream
shredded taco cheese
taco seasoning
I've thought of just warming up some salsa and adding in the sour cream, shredded cheese and chicken but it seems like it'd be a little runny...any ideas??
The oven will be at 450 for the cheesy taco fries, so the recipe needs to be stovetop, microwave or crock pot. Thanks!!
I made a delicious frittata and now I have a lot of left over crema fresca! What are some good recipes in which I can use up the crema? I love cooking and can handle pretty much any level cooking recipe, but I can only make simple baking recipes.
Bonus points for Italian or Mexican recipes! :) Thanks a lot guys!
I love eating at mexican restaurants.... not mexican-american, but authentic mexican. Can anyone cook like this???? If you can, how do you make tacos, enchiladas, the cheese dip....... I would really appreciate any recipes or cooking tips!!!

I need to bring in a Mexican dish for my Spanish class that I cooked myself. What are some recipes to make to share with the class? It has to be something to do with the culture.
It also needs to be something that won't go bad or taste gross if it isn't warmed up.
My husband is from Mexico, and would be thrilled if I knew how to make more authentic dishes. But he is a terrible cook, so I have to figure it out on my own. I would love ANYTHING (except mole), but I would especially like a taco recipe, a torta recipe, or a homemade flan recipe. Thanks in advance!
I've asked his mother and she's given me a few, but she doesn't have anything in "recipe form". She knows what the portions look like, but can't tell me exact measurements... which makes it a bit harder for some dishes.
I have black beans, pinto beans, and red beans soaking right now .I usually put them in a crock pot and cook them,I put onions and peppers in them also, and have also put in tomatoe paste and salsa ,fresh tomatoes ..cumin,chili powder ,pepper..I have just been making this on the fly and not really following a recipe..and it taste ..ok..I guess.but I would like a really good authentic Mexican recipe so that i can cook these beans up and make them fantastic tasting..any good recipes out there ? Southwest or Mexican style please...i don't mind hot..either..but not blazing hot
in "authentic" mexican cooking do they use sliced chicken breasts for fajitas and such or a fryer chicken that's been boiled. I thought someone had told me once they use boiled shredded chicken?
thanks for the tip, but it's really not amusing.

I have lived in Phoenix for years before moving east last year. Mexican restaurants here are terrible! I am looking for recipes and tips on how to cook Sonoran cuisine (enchiladas, burritios, tacos, etc.) Just looking for the basics- cheese enchilada, beef enchilada, rice and beans. Thanks!
I remember eating some tacos or burrito type food a few years back. It had ground beef marinated in lemon or lime juice to cook it. I'm wondering if anybody else heard of this and has the recipe.
I usually get the mexican spices from the store counter and just marinade the chicken n cook it....

Has anybody ever used a Tagene, and if so how did you use it? on the hob or in the oven, and what is a good recipe for the Tagene, We are meat eaters and love spice so if its hot its good.
A meat recipe would be good , thankyou. PS Any idea why it is shaped the way it is?
