authentic mexican food recipe?

in "authentic" mexican cooking do they use sliced chicken breasts for fajitas and such or a fryer chicken that's been boiled. I thought someone had told me once they use boiled shredded chicken? thanks for the tip, but it's really not amusing.

the best way to make authentic mexican food is to follow the recipe but be sure to use dirty water and maybe spit in it a few times, this is the way of the mexican people.
Well chicken breast will mostly be used boiled and shredded and you can find it in a huge number of recipes like enchiladas, enfrijoladas, mole, and so on.... We don't really slice it for real mexican food... Hope it helps!

AUTHENTIC MEXICAN ARE TACOS OR BURRITOS IN THIS MATTER, BUT AS FAR AS TEX-MEX FAJITAS ARE BEST WITH SKIN ON BOILED AND THEN SHREDDED CHICKEN ( THE WHOLE THING DARK AND WHITE MEAT ) AND THE CONDIMENTS ARE GRILLED VEGGIES AND A BLENDED SALSA !!
Fajitas are tex-mex, not "authentic" mexican. They were originally done with beef only (not chicken). Check out http://en.wikipedia.org/wiki/Fajita for more info. Shredded chicken is traditional for tex-mex tacos and burritos. I don't think that's the case for fajitas, though. Fajitas are cooked on a ripping hot iron pan. I don't see shredded chicken working well at all. It would just dry out and stick.
