If you go to a local supermarket and look at the Old El Paso or Discovery ranges, you can pick up a kit where you just have to add the meat, most of the kits come with spices and sauces. Try Fajita, Nachos, Burritos etc, also, buy a jar of jalapenos and some refried beans, yum.
There's so much to chose from and Mexican food is so easy. If you want something really easy just buy one of those meals packs - enchiladas, fajitas, etc. You just mix chicken or veg with the sauce provided and hey presto.
If you want something really impressive, make chilli tacos. There are meal packs for these too, but it's pretty easy to make from scratch.
Fry one onion
Add some mince and stir till browned
Add tin chopped tomatoes
Add tin chilli/kidney beans
Add tomato puree
Add chilli powder
Stir in and simmer for about 30 mins.
Can also add peppers, mushrooms, etc if you want.
When the chillis done, warm taco shells, stuff with shredded lettuce first, then chilli, then grated cheese and soured cream. Serve with rice.
Fajitas are the easiest thing in the world to make. Stir fry some thinly sliced bits of chicken with peppers and onions and mix with Schwarz Cajun Seasoning (you can get this from all supermarkets) and add a fresh chilli if you want some spice. Then warm through some tortillas in the microwave and serve with salsa, guacamole and sour cream (you get all these ready made at the supermarket). Some people serve grated cheese with them too. If you prefer beef to chicken, use those stir fry beef strips you can get. Enjoy!
Enchiladas are easy and killer. Everybody here devours them.
Fry in a pan til cooked:
1 1/2 lbs. ground beef/chicken/turkey/or pork
I medium minced onion
3 cloves minced garlic.
cumin, chili powder, salt and pepper
When meat is cooked, drain in a collander( if greasy) and add a little tomato sauce just to moisten. Taste for seasoning make it spicier if you wish.
Grease a large baking pan or pyrex dish (something like a lasagna pan)
Coat bottom with enchilada sauce.(comes in a can)
Take large whole wheat tortillas. place 3/4 cup or so of meat mixture in and top with 2 Tablespoons or so of any grated cheese you like. Roll up and place in baking dish.
When your finished filling dish, top with more enchilada sauce and lots of cheese. Cover with foil and bake at 375 for 30 - 45 minutes until hot and bubbling. You can take off the foil at the end and brown a bit.
When you buy the tortillas you'll find recipe for enchiladas on the back of the package. You can make them in an endless variety of ways.
Serve with salad, sour cream, and salsa.

Grill your favorite fish marinated with lime, cilantro, cumin, and a little oil and some grilled peppers and onions.
Then just serve the traditional accompaniments.

Enchiladas are really easy.
2lbs. ground beef
2 packets of taco seasoning
1 large can refried beans
onion
green chiles
8 flour tortillas
1 large can enchilada sauce
sliced black olives
2 cups of cheese-any kind, taco, mexican, cheddar
Brown meat, drain.
Add taco seasoning according to packet.
Add refried beans, chiles, and onions to meat mixture.
Stir until heated. Remove from heat.
Scoop meat mixture onto tortilla shells and then roll the shell up. Place seam side down in a 9 x 13 baking dish.
Continue with all tortilla shells.
Pour enchilada sauce over tortillas. Sprinkle with cheese and black olives.
Bake 350 for 20-30 minutes (until cheese melts).
This recipe is so quick and easy and tastes great. You can make it as spicy as you want with the different degrees of chiles, taco seasoning, etc.

Taquitos or tacos
Get beef stew meat,boil in water,garlic cloves,onion,salt.
boil till tender.
Once cooked shred with fork or fingers then get corn tortillas( warm them in the microwave for 30seconds) then put meat at the edge and roll..Deep fry and serve with guacamole,sour cream,shredded lettuce,tomatoes..Enjoy

If you don't want that make hard tacos...follow instruction instead just fold tortillas in half and fry till crispy...
cut some lettuce(thinly)tomatoes,put sourcream and gucamole in a bowl that way she can make her own tacos..
You can also add that to the top of taquitos.And a good salsa..
