Mexican Cooking Recipes Question And Answer
I need a good Mexican Bean recipe any good ones out there?
I have black beans,pinto beans,and red beans soaking right now .I usually put them in a crock pot and cook them,I put onions and peppers in them also,and have also put in tomatoe paste and salsa ,fresh tomatoes ..cumin,chili powder ,pepper..I have just been making this on the fly and not really following a recipe..and it taste ..ok..I guess.but I would like a really good authentic Mexican recipe so that i can cook these beans up and make them fantastic tasting..any good recipes out there ? Southwest or Mexican style please...i don't mind hot..either..but not blazing hot

It sounds like you have created a really good recipe on your own just add some ground beef! It is perfectly fine to not follow recipes when you cook and you seem to have a pretty good idea of what tastes good together! But...here are some for you to check out. 2 pounds lean ground beef
1 (46 fluid ounce) can tomato juice
1 (29 ounce) can tomato sauce
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 1/2 cups chopped onion
1/4 cup chopped green bell pepper
1/8 teaspoon ground cayenne pepper
1/2 teaspoon white sugar
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 teaspoon salt
1 1/2 teaspoons ground cumin
1/4 cup chili powder
DIRECTIONS
Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and crumble.
In a large pot over high heat combine the ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin and chili powder. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours. (Note: If using a slow cooker, set on low, add ingredients, and cook for 8 to 10 hours.)

Southwestern bean and rice salad
INGREDIENTS
3 cups cooked long-grain rice, cooled
1 (16 ounce) can kidney beans, rinsed and drained
1 medium green pepper, diced
1 (2.25 ounce) can sliced ripe olives, drained
1/3 cup lime juice
1/4 cup chopped green onions
2 tablespoons canola oil
1 tablespoon minced fresh cilantro
2 garlic cloves, minced

Method :
* Rinse beans, removing any foreign objects. Place in a large bowl and cover with water and allow to soak at room temperature overnight.
* Drain beans and place in a crockpot with the salsa and stir. Add enough water just to cover the beans. Cover and cook on low all day, 8 - 10 hours.
