I want to cook dinner for my boyfriend. Does anyone have authentic mexican recipes?

I want to surprise him. He has taught me how to cook a few different things, but I want something I haven't cooked for him before. Not anything extremely difficult and he likes almost anything - loves it spicy though! He is mexican so he will be able to tell if I did it correctly or not! =)

CHICKEN FAJITAS 4 boneless skinless chicken breasts 1/4 stick butter 1 cap full Mrs. Dash (regular or chipotle) 1 large onion 1 green pepper 1/4 brown sugar lettuce, tomato, sour cream, guacamole, cheese, tortillas Slice chicken into long strips, place in pan with half of the butter and Mrs. Dash. Cook until done and lightly browned. Stir in a small amount of water or chicken broth and the brown sugar. Cook until caramelized. Chop the pepper and onions into strips and rings, saute in a separate skillet with the remaining butter. Cook until onions are caramelized and peppers have crispy edges. These fajitas are really easy to make and a little different because they're sweet and spicy.

Just buy regular yellow cake mix and bake it. Once its cooled pour the "syrup" over and let it soak. After its soaked cover it with the "frosting". Leave it in the 9 x 13 pan you baked it in so that the syrup doesn't run. It sounds weird to Americans but its a Latin favorite! Below are the ingredients for the syrup and frosting. Good luck! My favrioute thing to make at the moment is Enchiladas. The ingredients for this is: 300g of chicken 6-8 heap table spoons of tomato puree (try to get puree that isn't too sweet) 1 tablespoon of cayene pepper 1 tablespoon of chilli powder 1 teaspoon of pepper 100ml of hot (not boiling water) loads of grated mexican cheese 4 flour tortillias First up switch on the oven to 180c and heat a frying pan with a little oil on a medium tempreture and cock chicken until brown. Put all of the puree in a bowl and add pepper, chilli powder and cayene powder (I have given the measurements I use but its up to you). Add the hot the water and mix together. Pour on top of the chicken (but leave a little but to spread on on top of the enchiladas) and mix in and add half of your mexican cheese. Lightly grease up a baking tin. Put the chicken mixture in to the tortilla wraps, roll them up and put them in to the baking tin. Pour the last bit of the puree on top of the enchiladas and spread it with a spoon. Add the last of the cheese on top and then put it in to the oven for 12-13 minutes. I hope you enjoy.
