Mexican recipe for chicken, sour cream, shredded cheese...?
I'm going to cook some cheesy fries tonight with some taco seasoning on them, so I'm looking for a quickie Mexican-ish recipe using the following(not all need be included, it's just what I have on hand):
10 oz cooked, cut up chicken breasts
salsa
sour cream
shredded taco cheese
taco seasoning
I've thought of just warming up some salsa and adding in the sour cream, shredded cheese and chicken but it seems like it'd be a little runny...any ideas??
The oven will be at 450 for the cheesy taco fries, so the recipe needs to be stovetop, microwave or crock pot. Thanks!!

I think that you should go with it. It's just the ingredients needed for soft tacos or chicken burritos. You might have to pick up your soft tortillas from the grocery store, but you seem to have everything else on hand.
Enjoy your meal
add the taco seasoning to the chicken and put the shredded cheese on it, mix in a little bit of sour cream and (if you have it) about a half cup of zesty italian dressing. It may seem strange, but its soooo good! Its better on tortilla shells but its good by itself too.

Dice up the chicken and cook in a heated skillet, when no longer pink add the seasoning and salsa, serve on warm tortillas or just dish it up and top with sour cream and cheese, I'd load it up with lettuce, onions, tomatoes and black olives too
Make chicken quesadillas
CHICKEN TACO PIE
2 whole chickens or 3 or 4 whole chicken breasts
2 cans cream of chicken soup
1 (16 oz.) sour cream
2 (4 oz.) cans green chiles (chopped, mild)
1 pkg. taco seasoning
8 soft corn or flour tortillas
2 c. shredded Cheddar cheese
A. Boil chicken, cool, take off bone and break in small pieces. Set aside.
B. Mix together soup, sour cream and green chiles. Set aside.
C. In shallow 13x9 baking dish layer 1/2 chicken, 1/2 soup mixture, 1/2 taco seasoning, 1/2 soft tortilla shells torn in small pieces. Repeat above and top with cheese.
D. Bake 35 minutes in 350 degree oven. Nice to serve with chopped tomatoes and black olives, to garnish.
Easy Mexican Chicken
INGREDIENTS
4 skinless, boneless chicken breasts
1 cup salsa
1 cup shredded Cheddar cheese
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper
1 pinch ground cumin
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste and add to hot skillet. Cook until brown on both sides and no longer pink (10 to 15 minutes).
Transfer meat to 9 x 13 inch baking dish or casserole dish, top with salsa and cheese and bake at 375 degrees F (190 degrees C) for 15 to 20 minutes (until cheese is bubbly and starts to brown.) Serve over rice or buttered noodles.
