WANTED AUTHENTIC mexican recipes (tampico)?

my husband is from Tampico I really wanna cook him authentic food hometown style. Im looking for things like tortas de la barda, seafood soups, torta de barbacoa, green salsa with chicharrones ?? not sure how to spell it. anything authentic. How do I get the flavor for different carnes like carne asada, the pollo loco the orange colored chicken. Thanks for your help

if you just go to yahoo and do a search for authentic mexican recipes you will probably find something really good. i got a really good tortilla recipe doing that.......
For the majority of mexican food, you should use cumin (or cumino). That "orange" chicken you mention, yeah I wish I knew that one too! But I'd definately go find websites that will point you to his hometown foods. I'm sure asadero cheese is involved there somewhere. That's wayyyyyy down mexican cheese. For carne asada, definately use beer (yep beer!) along with a lot of lime, salt, onion and garlic. You should definately get some gooooooood chiles too. Passillo ancho chiles will probably be your best choice. It's used in a lot of foods and soups; like menudo and tamales. Anyways, hope that helps!
TAMPICO SHRIMP 1 lb. fresh shrimp, peeled 1 tbsp. vegetable oil 3 1/2 tbsp. butter 6 tbsp. fresh cilantro, minced 6 tbsp. parsley, minced 4 cloves garlic, minced 4 tbsp. scallions, chopped 1 fresh jalapeno pepper, minced 2 tbsp. cumin 4 tbsp. red salsa Melt butter and oil in large skillet. Mix all ingredients and stir-fry on high heat until shrimp turns pink and has curled. Serve with rice and (or) tortillas.
Boil chicken breasts. Shred. Reserve 1 cup of liquid. Heat oil in a frying pan preferably a caldero if you have one. A skillet will do fine. Add the shredded chicken. Add 1-2 tsps. of cumin. 1 teaspoon fresh minced garlic. 1tbsp. paprika. add 1/2 cup of the liquid. 1 tsp. cornstarch (pre-dissolved). 1/2 teaspoon Adobo bradn seasoning with cumin. Fresh chopped cilantro. Heat to boiling stirring constantly. Serve with spanish style rice , refried beans , and warm flour tortillas. Chopped green lettuce , tomatoes, onions. Canned chili verde (the ready made is good) You can add diced tomatoes and fresh garlic to it. Serve over lettuce and as a condiment for the chicken. Shredded cheese can also be served. Chicken can be eaten in fajita style. _______________________ Boil a few chicken breasts. Reserve some liquid. Enough to cover chicken.Shredd chicken or cut into pieces. Add quartered peppers, and onions. Several green olives with pimiento. Add 1 pkg. of Taco seasoning and 1 small can of tomato sauce. Heat to boiling. Serve with white rice and refried beans.
