making spanish rice?

I like my spanish rice but it is not as good as others I have tasted.I have tasted spanish rice that looks greasy after cooked,mine does not have this greasy look and texture that I want it to.How do I get my rice to have this greasy taste and look...If necessary include your recipe, I fry my rice in oil and simmer on low in chicken broth for 20 mins. please note if your advice or recipe will allow for my rice to come out with the greasy look and taste.

GREEN CHILE CHICKEN ENCHILADAS 12 - 18 corn tortillas 1/2 c. oil 8 oz. shredded Monterey Jack cheese 3/4 c. chopped onion 1/4 c. butter or margarine 1/4 c. flour 2 c. chicken broth 4 oz. chopped green chiles 1 c. sour cream 1 chicken or 3 breast halves, boiled and shredded Cook tortillas in hot oil until softened (5 seconds). Place some chicken, cheese, and onion on each tortilla and roll up. Place seam side down in greased baking pan. Melt butter, add flour, stir well. Add broth; cook till thick. Stir in sour cream and chiles. Stir until heated. Pour over enchiladas. Bake at 375 degrees for 20 minutes or until heated through. Put remaining cheese on top and return to oven for 5 more minutes. Garnish with chopped green onions and a sprig of fresh cilantro, if desired.

Serves 12 600 grams white sugar 750mls (3 cups) milk zest of 6 oranges 4 eggs 8 egg yolks 1.combine 350gm sugar and 200ml water in a small heavy-based saucepan and stir over low heat until the sugar dissolves. Increase heat to medium and cook, shaking occasionally, until a dark caramel forms. Remove from heat and place saucepan in iced water. When cooled slightly, pour the caramel into a 26-28cm cake pan and swirl to line pan. 2.combine milk and orange zest in a heavy-based saucepan over medium heat and bring to just below a simmer. Remove from heat, cover with a lid and stand for 2 hours to infuse. Strain milk into a clean saucepan and bring to just below a simmer again. 3.preheat oven to 150C. combine eggs, egg yolks and remaining sugar in a large bowl and whisk until sugar is dissolved. Pour warm milk over egg mixture and gently stir to combine. Strain into a tall jug and stand for a few minutes, then skim off any foam. Pour custard into caramel-lined pan and place into a roasting pan. Fill roasting pan with hot water to come halfway up the side of cake pan, cover with foil and prick foil with a fork. 4.place roasting pan in the oven and bake for 55-60 minutes or until the custard has just set. Remove foil and allow the renversee to cool in water to room temperature. 5.turn crème renversee out onto a plate, cut into wedges and serve drizzled with caramel.

I can't cook! Where can I find simple recipes to practice?

I'm really hopless in the kitchen, the only thing i successfully make in the kitchen is a mess!! When I lived at home my mum did all the cooking, we ate frozen pizzas, chicken nuggetts ect. Partly my fault because I was a fussy eater as a kid, I didn't like veg. When I moved in with my boyfriend two years ago we ate pretty much the same thing. He does nearly all the cooking. We eat loads of take-aways too. I would like to be able to make something nice and different. I'm lacking inspiration and have no imagination with food. I've looked online at some recipes and tried to find a cook book I could use but can't seem to find thing i would like and could make. Both me and my boyfriend hate mushrooms, italian and spanish food but we love chinese, indian and kebabs. We also eat loads of chicken! Does anyone know where I can find simple recipes?

So my teacher assigned each student to bring in any kind of spanish food to class tomorrow. I don't want anything really dull like cheating and buying cheap salsa and chips, but I don't want to spend my whole day tomorrow committing to really difficult food to cook. Hey guys, I go into my modes. One day I LOVE to cook, but the next it's like blah. But I have to cook for my fam. I work Mon-Fri 9-5. I'm usually home by 7:00pm so by then the meat has already marinated cause I season it in the morning before I head off. I'm hispanic (dominican & puerto rican) so the basics are rice, beans and chicken, lol. My hubby is African-American so I try to make all kinds of food, but he LOVES the Spanish cooking... :-) I'm still rocky with the cooking though. Do you use the infinitive or imperative form of Spanish verbs in recipes?

I am not sure if I should use formal commands (I suppose not technically imperative, but rather subjunctive since it is formal) or the infinitive from of the verb when writing Spanish recipes. I have seen it done both ways, but I want to know which is *technically* correct. So, if I wanted to say, "cook for ten minutes" would I use "cocinar" or "cocine"? Infinitive or subjunctive?
