When cooking Spanish dishes with sherry, is it best to use dry or medium? Often the recipe doesn't say.?

I would say dry but, we all have different taste. So basically it's entirely up to you.
It depends what you are cooking. With red meat its best to use medium, with white meat, seafood and vegitarian dishes, then dry is better.
I think it´s usually dry, but I´ll ask my mum and will tell u later today :)
Unless it states sweet you use dry sherry to cook with.

I would go with dry. If you have medium just kicking around the house, I wouldn't go out and buy a whole bottle of medium just for one recipe though.
Whatever you drink. When cooking with wines and sherries, use what you like or you may not like the dish.
